The "Best" Brownies 

  • 200g of Ombar

  • 200g of  coconut oil

  • 2 tsp of vanilla extract

  • 150g of coconut sugar

  • 3 eggs

  • 250g of ground almonds

  • a pinch of salt

  1. Preheat the oven to 170 C.

  2. Melt the chocolate and coconut oil in a bowl together. 

  3. Once melted stir in the sugar and vanilla. Leave to cool for 5 minutes.

  4. Beat the eggs in a large bowl then pour in the chocolate mix and stir vigorously. Add the salt and then the almonds until the mixture is fully mixed.

  5. Grease a small baking tray with coconut oil and pour the brownie mix in. Bake for 25 minutes.

I have been trying to get "healthy" brownies right for a while now. These are by no means as healthy as the other ones I have tried, which have been black bean or sweet potato or avo based, but MPK has declared these are the BEST and has been joyously eating them for all meals since Saturday. (BTW MPK is an expert brownie eater and tester, with 30+ years experience!)

 

I topped them with maple sugar caramalised pecans, vanilla coyo and berries.
