Boodles with Chickpeas and Spicy Roast Tomatoes

1 Butternut Squash spiralised

1 x can chickpeas

1 x tbsp tomato puree

1 x punnet of assorted cherry tomatoes

1 x tsp garlic powder, chilli flakes and black pepper
Recommended topping, basil, nutritional yeast and toasted hemp seeds
This is one of my favourite go to dinners when I get home late, it is quick and packed with nutrients, high in protein and so tasty.
Fridge to Mouth in 25 mins - yum.
Add to a roasting tray with a drizzle of olive oil, black pepper, garlic powder and chilli flakes
Prepare your Boodles and add to a bowl. Cover with clingfilm and microwave for 2 -3 mins until soft.
Pile the chickpeas high on the boodles, sprinkle with herbs, or toppings of your choosing. I like basil, nutritional yeast and toasted hemp seeds. EAT!
