Boodles with Chickpeas and Spicy Roast Tomatoes

Serves 2

  • 1 Butternut Squash spiralised

  • 1 x can chickpeas

  • 1 x tbsp tomato puree

  • 1 x punnet of assorted cherry tomatoes

  • 1 x tsp garlic powder, chilli flakes and black pepper

Recommended topping, basil, nutritional yeast and toasted hemp seeds

This is one of my favourite go to dinners when I get home late, it is quick and packed with nutrients, high in protein and so tasty. 

Fridge to Mouth in 25 mins - yum.
