"Seedy No Kneady" Bread

  • 68g Seed Mix (I used one from Holland and Barrett)

  • 68g Pumpkin Seeds

  • 90g Flax Seeds

  • 65g hazelnuts (can sub almonds) 

  • 145g oats

  • 2Tbsp milled flax seeds

  • 4 Tbsp psyllium husk powder

  • 1 tsp fine grain sea salt

  • 1 Tbsp maple syrup

  • 3 Tbsp melted coconut oil

  • 350ml water
     

1. Combine all the ingredient together in a bowl excluding the water and mix until combined.

 

2. Add in the water and stir well.

 

3. Working quickly put the mixture into either a sillocane loaf tin or well lined metal loaf tin and leave to rest on the side for a minimum of two hours. To ensure the dough is ready, it should retain its shape even when you pull the sides of the loaf tin away from it it.


4. Turn to oven to175°C.


5. Place loaf tin in the oven and bake for 20 minutes.

6. Remove bread from loaf pan, place it upside down directly on the rack and bake for another 30-40 minutes. Bread is done when it sounds hollow when tapped. Let cool completely before slicing (this is a killer but SO IMPORTANT) 
 

 

This bread is so so delicious - possibly the best thing I have ever made, eat it slathered with coconut oil and salt and pepper or with crushed avo or toasted dipped into hummus. The possibility are endless.... life is good...
